Chili Con Carne Recipe Ingredients
3 lb rump roast
24 oz whole tomatoes
1 red pepper, chopped
1 yellow pepper, chopped
1 medium yellow onion, chopped
1 jalapeno pepper, chopped
1 – 2 serrano peppers, diced
2 teaspoons smoked paprika
2 teaspoons oregano
1 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon pepper
zest of one lemon
juice of one lemon
1 cup beef broth
1 cup cilantro, chopped

Chili Con Carne Directions
Trim up a 2.5 – 3 pound rump roast, you can also use a chuck roast if you can’t find a rump roast. Score the top and bottom of the roast, with about ½ inch deep cuts in a crosshatch pattern. Season liberally with salt and pepper.
Heat 2 tablespoons of avocado or olive oil in a cast iron skillet over medium high heat. Sear both sides of the roast until nicely browned. Remove from heat and let cool while you make the spice rub.
Mix 2 teaspoons of smoked paprika, 2 teaspoons dried oregano, 1 teaspoon of cumin, ½ teaspoon of salt and ½ teaspoon of ground black pepper. Add the zest of one lemon, and the juice of the lemon and mix together into a paste.
Rub the paste into the seared roast, getting it down into all the cuts and grooves on all sides. Then add the roast to the bottom of the slow cooker.
Peel and chop one medium onion, and add it to the slow cooker. Chop one red and one yellow pepper and add it to the slow cooker. I’m adding one jalapeno, sliced, and a half of a serrano pepper, diced. You can add more or less based on how spicy you like your chili.
Add all the peppers to the slow cooker.
Next, add one 28 oz can of whole tomatoes, add the juice and I like to squeeze the tomatoes, giving them a crush.
Roughly chop about a ½ cup cilantro, and add to the slow cooker. Reserve the remaining cilantro for finishing the dish after cooking and for serving.
Measure 1 cup of beef broth and add to the slow cooker, look at how incredible this looks!!! This will cook for 7 – 8 hours on low, and it will be the most tender, delicious Chili Con Carne you’ve ever tasted!
Once it’s finished cooking, use tongs or forks to break the roast into thick chunks of beef. It has great color from the searing, nice big pieces of peppers and tomatoes… top with more fresh chopped cilantro and serve!

I don't use a recipe per se but here are steps to making a great chili

I usually go for shin but chuck works fine too, I've seen people use oxtail with the bones picked out as well. OP's picture shows perfect size chunks, you'll need to cut them to around 1.5 times that size as they shrink during cooking.

Braising the beef in beer will give an amazing flavor. Go for a stout or porter ideally but a medium ale will do as well. Besides that you want tomato and some stock. My main liquid is usually the beer, while I use concentrated tomato paste and concentrated stock just for the flavor, but you can use fresh. Generally go for chicken stock, though you could use a combination of chicken and beef.

Take a blend of different types of chillies - sweet/fruity, fresh/peppery, smoked, hot. Try to hit a few different notes. I usually go for scotch bonet and dried habanero for heat, a tonne of ancho for sweetness, chipotle for smokiness and roquito peppers for freshness.
>spices
Use lots of cumin, sweet paprika and garlic powder. Use a little clove, anise, black pepper, mustard seed, cinnamon, coriander seed. Use whole spices where possible.
>additional flavors
Coffee, chocolate, marmite, fish sauce, soy sauce, worcestershire sauce, vinegar. Anything to give extra depth and to make sure the flavor is balanced.

Start by browning your beef. Get it extra brown and crispy, it will soften up again in the sauce. Don't stop at grey. Meanwhile sweat some garlic and onion along with any fresh peppers, and dry toast your spices in a pan before grinding them. Add the tomato paste to the onions/garlic and cook it a little, along with any dried peppers that have been soaked and blended. Add your spices and any other flavors, this is the basis for your braising liquid. Then you add your beef and beer and that's pretty much it. It's done when the beef is moist and tender, 1.5-4 hours depending on the cut and size.
