I started eating natural foods. I put the chips away at least 2 or 3 years ago. I don't even regret it. You'll thank yourself later.

I snack on cashews. Those things are addicting. Sometimes cashews + raisins. If I eat chips I try to go for a lesser evil, like chips made from chickpeas. I never go for Lay's or Doritos anymore like I used to. Especially hot Cheetos. I used to love those things the most.

1) Take any root vegetable and slice it thin. (Of course give yourself a firm base by slicing in half first) (Most are fine to just scrub with a brush but leave unpeeled -- plenty of flavor and nutrients, and you're not serving at a restaurant.)
2) Pat slices relatively dry with paper or cloth. If the veg has a lot of moisture, you can draw it out with some salt or in the microwave at low heat, but I've never found it necessary.
3) brush with oil of choice (or toss in it if particularly porous, like lotus root), season, then put it in a medium-hot pan. Alternatively, bake the fuckers. With an online recipe remember these are thin as fuck, so you need to cook slower at lower heat or they will burn.
4) Give them a few minutes til they're lightly brown, then flip them, then transfer them to a rack or just right on a plate. There's no more oil in these chips than you would use in an air fryer, so there's no need for a drain step, and they're so thin that they're cool quick enough just fine directly on a plate -- thus you should eat them pretty soon after cooking if you want them hot and chewy.
4 alt.) Alternatively, go *really* low and slow in the oven until they are mostly dried out, and brittle, more like potato crisps.

Again, pretty much any root veg works for this. As part of testing out a root veg I haven't tried before, I usually make a small batch of these, among other things.

For what reason are you replacing chips? Cost, or for health reasons? If health reasons, specifically, is it a calorie issue?

For calorie reasons, rice cakes are a pretty good substitute. Although, you're always going to struggle with calories if you don't address the real issue of over-eating. That being said, when I first started counting calories, I bought rice cakes because if I lost self-control and ate the entire bag, it's still only 630 calories which isn't bad. Pic related.
