Yeah, I don't get people who will insist that one sauce goes on everything. One of the local stores has a fairly varied hot sauce section. I usually grab one or two new ones to try every time I need to replenish a favorite. I try not to keep more than a dozen around at any given time, but it's a constant rotation.

The one i make myself, just a simple vinegar based sauce.

50g Scotch bonnets, 120g generic red chillies for flavour not heat, half a small onion, 3 cloves of garlic, 240ml apple cider vinegar, 5g salt. Chop all of it and add everything to a sauce pan, simmer for 10 minutes, let cool slightly then add to a blender untill smooth.

I think of it as a gourmet version of taco bell hot/fire sauce. Japaleno & Habanero base, with strong paprika and cumin flavor.

Yet another non-fermented Habanero sauce, this time with some more garlic. Yet again, a delicious spicy sauce.

Now, for the fermented sauces.

Classic fermented cayenne & vinegar, with a little garlic. Grew up with Frank's & butter being the go-to wing sauce.
>Huy Fong Sriracha
Your basic bitch Sriracha, just a nice fermented chili / garlic / sugar / vinegar like so many, but a nice, distinctive set up peppers.
>Tabasco Family Reserve Pepper Sauce
Like your standard Tabasco, but with the "funk" kicked up a notch. Everything that's good about Tabasco is better in their Family Reserve sauce. The simplest ingredients list of any sauce on this list (no thickeners, preservatives, or anything) - just white wine vinegar, red chili peppers (proprietary, of course), and salt.
