Fish has perfect marbling, i.e. the fat is distributed evenly throughout the flesh as opposed to chicken which has the fat all in the skin or beef/pork where it collects in fatty deposits. That's why fish has that flakey, buttery texture which I love. Also goes great with lemon yum

The same way I did. Squeeze lemon on it, cut off a little piece, try it. Chew it, think about the flavour. It tastes good and has a nice texture. The crunchiness of the batter mixed with the softness of the fish is very pleasing. Mmm. I'm going to get fish and chips for tea tomorrow night. I'll post a thread when I do. I usually have flake (shark in Australia) and chips. No tartare sauce, just lemon.

It also depends on your personal taste.
I love tuna (raw more, cooked less, don't really like canned). I like salmon, while sea bass and cod are ok. Trout can be pretty good, but only if it's done well. any fish as ceviche sucks donkey ass.
But that's just how *I* feel. There's a whole world out there. Explore it and see what *you* like.

I grew up in Seattle before Luger sound was a complete sewage dump so sea food is a big part of the dead things I eat. First is freshness. Stop eating frozen fish unless you fry it. It’s always shittier and lacks flavor. Then we get into what species of fish which has to do with fat content, bottom feeder or not, density, and of course flavor. For example, Salmon, if you can find something wild caught without dyes and isn’t actually trout, all you need to do is salt the skin side. Fry it with a layer of butter on the pan on a searing heat then lower the temp and flip it. Put a lid on to bake it until there is just barely a wiggle to the meat then serve it skin side up. Fry onions and potatoes in the fat on searing heat while the meat rests. The flavor of the fish is important. I grew up eating anything with gills. Eel, squid, carp, catfish, cod, crabs, clam. It’s late where I am but I’m happy to share what I can if anyone is interested.

Go to a nice restaurant that does fish well. Order some Halibut and notice how much different it is from your picture.
