There's a gastropub in Jersey City called The Archer which has a mushroom risotto dish. It's topped with some breaded and deep fried hens o wood. And I'm telling you, that's one of the best things I've eaten in my life. It's just so meaty and dripping with grease and flavor, it's like KFC. They're very similar taste wise, but chicken of the woods has a softer texture and it grows bigger lobes so eating a big piece of it really feels and tastes like a huge slab of prime chicken meat, but I would say actually better than regular chicken.

Ohh definitely. Chicken of the woods too, but in that case more so because it gets eaten by slugs within a day or two of blooming usually.

Another favorite are elm oysters, partly because they're so prolific around here and grow massive sometimes.

Morels and chanterelles are the kings with the hen-o-the-wood coming in hot behind.

I would however like to shine a spotlight on wood ears. Downright sexual stir fried with pork, in hot pot/soup, or in a cold salad.

But a mushroom risotto with chanterelles and morels has got to be in the top 10 most delicious meals on the planet.

I think it has to be maitake. Friend in a pan with butter at high heat, it has the exact taste and texture I look for. I had this smoked cured maitake at a fancy restaurant this weekend in this incredible riff on a seafood chowder (onion tuille, baby potatoes, smoked green tomato cream broth, and the maitake), and it was heavenly.

Wish it was a little less expensive though. I can buy a nice steak for almost the same price as a head of maitake, so I generally just opt for the steak. I have an idea in my head of soaking it in a seafood broth and breading/frying it like clam strips. One day I'll get around to it.
