Low heat, lots of butter, and grated high fat cheese (Gruyrer, Gouda, etc.). Stirr very frequently and season it with a little salt, pepper, smoked paprika und a little ginger powder (optional, but I really like it). Cook until it reaches your desired consistency, I like them at the consistency you can spread them well on bread. You can optionally top them with some chili sauce like sriracha or whatever you like
