I use it, but many people don't understand how to.

A. It's a salt, so if you add it you have to reduce the regular salt, often people double up on salt because there was salt in a sauce they used or somthing.

B. It's a salt, so you add it last. People make the same mistake of adding it into something before they cook it down.

C. It's a salt, so you can easily saturate your palate if you add it to a sauce. You're adding MSG to every individual drop of sauce. Industrially MSG is often used as a powder.

D. Be sure there's no MSG in your food to begin with, it might be listed as E621 and there are several related analogues .
Some food is also MSG rich to begin with like fish sauce, soya sauce, tomato sauce, seaweed and parmesan.

The issue is that MSG is in literally everything, from tomatoes to chicken stock/bouillon (especially in transformed, industrial shit). If you have a specific allergy regarding this crap, you usually are pretty careful about the shit you eat and you pre-emptively notify your host about your particular issues, just as if you were allergic to nuts.

People telling you they're allergic to MSG usually do not go through this process, and only acknowledge they have it when the host explicitely said that they added that particular additive

I usually use a few dash of maggi sauce in lieu of msg powder (unless the flavor doesn't make sense in a particular dish, in which case i just use plain msg), especially in sauces. This is because I mostly only deglaze with water, since I use a lot of spices, the meat already has a meaty flavor and the stocks usually just overpower the flavors already contained in the dish. a stock tends to round up the flavor. Whereas this way i can still taste the spices and the meat sharply so, while retaining the extra savoriness thanks to MSG. It also gives me a greater degree of control on my additives, be they salt or msg or anything. I hate to cook with pre-spiced, pre-flavored stuff because it's usually made for a mainstream public which means the flavors are unvariably dull.
