Just bought one of these badboys off Amazon...

I've been binge-watching BBQ videos on YouTube and I really, REALLY want to start grilling.
Who knows? Maybe I'll evolve into a pitmaster and graduate to a big-boy grill someday, but this is a good start.

What should be the first thing I throw on her, /ck/?

Also, if there's any pitmasters here. How'd you guys start out? Any tips or words of wisdom for a noob? (I'm a good cook btw, just don't have much experience with charcoal)

>> No.18743602

I'm not a pitmaster but I always heat them say taste the heat not the meat. Not sure what they meant by it.

cheap lump charcoal > expensive briquettes.
charcoal chimneys are excellent at lighting and heating charcoal, just don't be a tard like me and get a massive one, a small/medium is enough

>>18743602
No clue what that means either...

>>18743604
I figured. I actually bought a standard weber chimney along with those little wood roll firestarters.
I planned on using cheap lump for the most part except I'll buy some briquettes if I want to try the snake method.

>> No.18744830

For fucks sake don't be retarded and buy lump or off brand briquettes. Start with Kingsford blue bags. The heat consistency is unparalleled. Also buy the book meat head by Greg Blonder. Read that and start grilling/smoking until the carcinogens take you.

I get 3 or 4 sheets of paper towels wad them up into a ball and put a tbsp of veg oil or canola oil on them for my fire starter it’s cheaper and it burns for like 5 minutes

I don't know if I'm technically a pitmaster, but you would be hard pressed to find a man who can work a weber kettle better than myself. From bacon and eggs in a cast iron or on non stick foil, to babyback ribs smoked for 8 hours you will not find a better grill than the weber kettle.

a few tips.
Never use matchlite, ever.
Always monitor your heat, this is more important the smaller the grill.
Indirect heat is your friend, once you are happy with meats cook time, you can move over coals and get that finishing sear.
Cheap off brand charcoal is usually garbage, Kingsford original is hard to beat.
Wood adds great flavor but dramatically increases temps inside your grill, just be aware of this fact.
Smoke covered cook surfaces are non stick.
The weber kettle can be used for grilling or BBQ using the snake method, I have grilled on komodos and the green egg, compared to an old smoked out weber kettle, I was not impressed and would buy a weber before any other grill.
You can use almost any hardwood to add smoke, I like pear wood because I have 8 bradford pear trees on my property. Pear wood burns like the sun, in case you ever try it.
If going low and slow, LEAVE THE LID ON, constantly fucking with your grill WILL mess with cook time.
If going hot and fast, don't use the lid, always monitor your food or you will wind up with charred shit fast.

Honestly grilling or bbq just requires a little patience and common sense.

You chose a great grill anon, it requires very low amount of dicking around to maintain and set it up. Pretty much the Goldilocks size for a 2-4 people meal.
>use lump charcoal, experiment with briquets when you git gud if you will, you probably wont like them

>don't fucking salt your burgers until right before they go on the grill
>use the snake method to smoke shit, yes with lump, you get ~8h of smoke time with full around snake
>leave the bottom damper open all the way and adjust heat with the top one, you get more stable temp that way
>get a grill brush and clean it every time, I like the ikea one for this grill as it can easily reach the edges, 40 year old stale grease is a meme

a normie diet doesn't take years off the end of your life, it takes life out of all your years

The way I see things is that I have a duty to maintain my health to the best of my ability if I'm going out of my way to make myself part of others' lives instead of being a shutin gamer. It costs me nothing because I'm wired differently, preferring nutrient density over energy density. I never liked candy and will buy too many greens if I go shopping hungry.

Yeah Kingsford original is the best for consistency and flavor. Here's a pic of my first ever smoke I dug up and it looks an apetizing red just like yours. Btw all charcoal is a byproduct full of shit. Don't act holier than thou when you're out of your depth.

Tl;Dr lump charcoal is a meme, use Kingsford until you get good. Then you can cheap out with lump (which is still a bad idea unless you like burnt and yet undercooked meat). Never buy off brand briquettes, they suck bad, I found out the hard way with Costco off brand briquettes.

always use a chimney
kingsford briquettes (especially if smoking) good lump is ok for real high heat when searing steaks, but hard to manage while a noob
Learn how to control heat with vents. The dome thermometer is kinda shitty, I use a dual probe thermometer if I’m bbqing (one on the grate and one in the meat and cheap on Amazon)
Learn how to indirect for bbq. I bought a slow n sear (look it up, like $50) it makes smoking really simple and has a water resevoir built in to keep things moist

Other than that, go wild. It’s a blast cooking different stuff. My favorite so far has been ribs on the 3-2-1 method, but I’ve had good results with pork, brisket, sausage, even smoked fish

Muh snake, 2 wide, 2 high flat gives me about 200 degrees for as long as I make the snake max burn time for mine is 10 hours with a fully wrapped snake. This one only needs to go for about 8 hours. Used a sprinkle of mesquite because I couldn't be arsed to saw up some pear wood.

let'er roll for about 7-8 hours depending on grill temps. Monitoring the heat of your grill is extremely important, just put your hand above the upper exhaust port, if it's hot but not too hot to hold your hand there for a bit, that's a good sign, if it is too hot, make adjustments. If your weber is rolling along at 200-230 you will be able to keep your hand above the exhaust port for several seconds, ngl, it takes years to get this science down, lol, you can quite accurately determine the temp in your kettle by monitoring the exhaust. Using the snake method will result in quite consistent heat and you won't have to monitor it too much, but you will want to spin your rack as the snake progresses keeping your meat from getting too hot on one side or in one spot.
