Yeah, while I was in Germany I ordered fries for the first time from some Turkish dude and got hot, crispy fries completely fucking doused in mayo... just so they can become cold and soggy. I found out soon after that that was apparently "normal," and everyone there eats fries in this manner. It was extremely disgusting. Why do they cover it in mayo? I mean this shit was COATED, like when a fat fuck in line at Subway asks for triple mayo on their sandwich and the employee has to coat both the top and bottom of the sub in mayo, and when they fold the sandwich it all splooges out the sides. Why not just add a dipping cup on the side with the fries? It's not necessarily the mayo vs ketchup argument here, it's the fact that pouring gobs of sauce on fries makes them fucking soggy and cold, and makes some fries have a disproportionate amount of mayo on them while others have none. It's abhorrent and anyone who likes it is probably mentally ill.

I've poasted it multiple times before here and I'm going to do it again:
This is a multi-million dollar venture.
Any decent city, or even unpozzed suburb, set up either a small stripmall storefront, or a decent foodtruck with a bank of 8 fryers and a decent, adjustable syrup soft drink fountain that ONLY serves cane sugar fountain drinks, and fries and maybe a few other things fried in Beef Tallow. Potatoes are cheap, and you should be able to buy a decent fry cutter cheap. You wouldn't even have to charge the ridiculous 5G*Ys prices, people will find out, and beat a path to your window. you could even offer 1 free refill,(A simple permanent ink stamp would take care of the scammers,) and at $1.50/12 oz. and $2/16 oz.(sorry only sizes we got!) you will Still make a killing and people will be more satisfied since cane sugar DOES THAT. The Template for the fries is already well established:
Fresh cut, into the 257° oil for the first cook--Then, into the holding bin to rest.
Second fry--to order--at 350°
That's it...Change NOTHING.
Maccas used to have fries that were "better than sex" because even though they were cooked the first time and then frozen, they were finished at 350° in TALLOW.
Millions of Maccas customers were sorely PISSED when the conversion to PHSO(Blue bags of block shortening to Red bags,) and McDicks lost so much of their customer base from this, they eventually had to add a flavor additive to the oil to not lose even more of the market share.
Every other "High end" burger joint uses peanut oil, which is better, but is NOWHERE CLOSE to being as good, and the fries tend to get either a burnt flavor or are WAY too greasy.
A 5 gal. case of syrup is ~$90
~320 12 oz. serves.
~.25¢/cup (both)
there are several great cane sugar dealers, Boylan, Jones and Brix just for starters.
Of course you'll want an assrtmnt of condiments, 'Chup, Mayo, flavored mayos, and at least a decent cheese. but you'd have to fuck up BAD for this to fail.

As I posted earlier--McDicks had NO PROBLEMS with it. I've worked with it as well.
the Veg shortening is solid as well at room temp. All filtering and change out takes place while it's hot.
