I pretty much only use cast iron. I even make tomato sauce in a cast iron dutch oven no problem. They're durable, you can use them on the stove top, on a grill, or in the oven. They can sear, they're non-stick, and easy to clean. Maintainence is easy once you get the hang of it.

The only issue is all the kitchen smoke. I don't have an exhaust fan in my old ass apartment, and I cook with cast irons a lot. So the greasy kitchen smoke settles in the dust and eventually a greasy sticky film coats everything which is very unpleasant.

Seasoning is a polymerized layer of oil that has practically bonded to the metal. If you have any cooking sheets or broiler pans that have "crud" stuck to them that won't come off in the sink, that is seasoning. Pic related.

Seasoning will not come off with dish soap or an ordinary scrub brush or sponge in the sink. The only way to remove it is with caustic, lye-containing soap, which Dawn or Palmolive does not have, or extremely abrasive brillo pads, which you wouldn't ordinarily use to clean up after cooking.

It also, contrary to popular believe, doesn't impart flavor to the food. It's as flavorless as any other polymer. The purpose of having it is mainly to prevent rust, prevent iron from flavoring acidic foods, and secondarily to make the pan nonstick.
