I'm frying meat. Burnt black shit starts to accumulate in the pan, but I'm not done frying. How do I deal with it? Do I jscrape it off in the sink and keep frying? Do I stop frying, wash the pan, then replace the butter with spices? How do you deal with burnt shit while frying meat?

Butter has a very low burn point. either cook at medium low for longer, or use a more fortuitous oil.

That stuff is fond, juices from the meat sticking to the bottom of the pan. So long as there's something on top of it it shouldn't get too dark. And if it's not totally burnt then there's good flavor there, it could make a good pan sauce.
It shouldn't be burning over the period of a single batch. That is, you should be able to finish cooking your steak or burger or whatever without the fond getting too dark. If it is burning before then, I dunno, maybe your heat is too high.
And if it has burnt then the only thing to do is get rid of it. Don't just pour greasy shit down the sink, that can clog your plumbing. But, pour off the grease, wipe up any grease left in the pan with a paper towel or something, and boil a little water in the pan to make the residue come off. That's called "deglazing". At that point you can just pour it down the sink, I think.

But yes, if the shit in the pan is burnt you do just have to stop and wash out the pan, or it'll make everything taste burnt. Try not to burn shit.
