It's already an adaption. He basically made chinese smashed cucumber salad, except with added eggs and he cut the cucumbers the same way you would cut the eggplant in a chinese "dragon eggplant" dish. Not quite sure why he replaced spring onion with leek though.
If you are considering summer dishes/salads, crushed cucumber salad is super easy. Also Chinese Tiger Salad (Lao Hu Cai). A little more work, but not much, and still very much worth it.
