The main difference between pho and ramen is the types of places that serve it.
I can go to a ramen place in a boogie shopping center, deal with jaded wagie staff, wait 15 minutes for a table, squeeze into place overflowing with weeb hipsters and Air force enlisted, pay $15 for a moderately sized bowl of soup, wait half an hour for it to arrive, and after I'm done eating be asked to leave 10 minutes after after I pay.
Or I can go to a pho place across the street from Wall-mart, Mr. Nguyen or one of his kids will welcome my as a walk in, I can sit anywhere I want, order a big bowl of beef soup for $10.99, it comes in short order, and my friends and I can sit around and chat all evening.
There's really no choice.

I like both. Though it's really hard to find ramen where I live anyway, so not much choice. I've made both myself and ramen is more like occasional treat, while pho is more like every day meal.

Americans associate "ramen" with instant noodles and they're not going to pay a restaurant for that unless they're weebs who know better.

Plus, pho gets the hipster vote because it's less well known, and we all like to feel superior by correcting people about the pronunciation, and we like to laugh boomers getting grossed out by tripe.

Also, we usually prefer ethnic cuisine to be prepared by a Authentic Ethnics, and there are simply more Viets than Japs in the USA overall--and they're more likely to be poor immigrants with funny accents, really adding to the restaurant's ambiance and helping to assuage liberal white guilt, especially since some people still feel bad about the war.

Also, the "casual Japanese cuisine" market in USA has already been cornered by sushi (usually prepared by Koreans, lol silly round-eye doesn't know).

I work at a pho restaurant, it's mostly just sugar and oil.

ramen restaurants, especially the japanese chains that spread abroad like ippudo, garner the worst clientele and charge outrageous prices. it's all food bloggers, FOB instagrammers and city worker drones
vietnamese restaurant oweners on the other hand are salt of the earth people who are just trying to make good food and pay their rent.

chinese restaurants seem to occuppy either position. either they're super polished instagram bait bullshit and all their clientele is 20-30 year old rich mainlanders, or they're neighborhood institutions with banquet tables and serious cantonese (or whichever other) specialities

i'm writing this from an australian perspective, but i'm given to understand that this is the case in the big cities in the states as well (NY & LA mostly)

This. There was a pho place I went to every other week in college and it eventually becomes like a "I'll have the regular" situation and they'd just know what to bring me.

And while I like ramen too many "chefs" try too hard to put their own spin on it in my town, with weird ingredients and flavors to try and make it unique, like heavy ginger flavor. Takes it from being cozy soup to just another hipster restaurant.
