First time trying specialty coffee, local roaster had a subscription offer that sends you two bags a month for half a year so I thought I'd give it a whirl, will be nice to have two things to compare.
The brazilian one smells fantastic to me (as beans) but I don't really have much to say about the taste other than it's kinda pleasant, nothing really jumps out about it to me.
The ethiopian one on the other hand finally made me understand what people mean when they say a coffee tastes fruity. The taste notes on the packaging do not emphasize fruit enough, it's so fucking fruity.
Prefer the brazilian one out of the two but I'm very happy with both.

You're paying for access to more torque and consistent rpm. Consistent rpm means you're getting the same grind at the same setting, whereas if you're having to struggle with dense super light beans on a hand grinder, you're probably varying your turn speed, which is going to give you variance from cup to cup. That being said, kinu m47 is great. Top tier adjustment + fast feed rate + low friction coated burrs give a very easy grinding experience and the coffee coming out of it is top notch and fluffy. Niche will probably give a marginally "better", but similar cup as they're bimodal and targeting the same style of espresso, but the niche will do it with way less effort on your part. Niche has better workflow than alot of grinders at 3x the price point. GBP is pretty weak right now so they're cheaper than ever.

Oh also precision machining costs money and when you're trying to keep your burrs aligned at a 200micron gap while coffee beans are slamming them apart, you don't really want any slop. Yep. Way easier to grind and keep a consistent rpm when you "slow feed" in light beans by tiling your grinder at 45deg, but its going to tweak the distribution. Just little shit to keep in mind. When you've got an easy to grind bean, you don't have to sperg out and grind as quickly as possible.

A good motor with a shitty driveshaft is going to make a shitty grinder. A good motor and good driveshaft with poorly aligned burrs is going to make a shitty grinder. When you start getting into the stupidtiers of grinders you're talking about an entirely different world of machining. The guys I ordered from sent me a video during assembling showing ~0.012mm of concentric variance. You could probably have 10x the variance on that part and not notice it in the cup, but at that level of precision I'm just going to assume literally everything else is machined as close to perfection as they can reasonably get it.

Cold brew, hot bloom your coffee: pour about 1.5 cups of hot water over the grounds, shove your spices and vanilla in while it's still hot, allow to bloom for 30 seconds, then pour over the rest of your water. Let steep in the fridge or at room temp--covered, obviously--overnight. Let those flavors get to know eachother and mingle. You can add your 1/2 cup coconut cream and 1/2 cup S.C. milk now, or 1/16 cup each, per drink, when you are serving it. I prefer now.

Take that bitch out, filter it through a fine meshed sieve and add a little pumpkin syrup. Drink it.
