Is it? I lived in New Orleans and loved it but in the end I found myself having to search out non fat guy food.

As for the rest of the south their food is kinda meh. They have two truly great regional dishes: Turtle soup and Shrimp with Cheese Grits.

There's more to cooking than that. There are countless intricacies and variations and no I am not saying southerners are uniquely flawed in their cuisine.

Take garden vegetables and boil them with a hambone and salt for a few hours. Chop up an heirloom cucumber and tomato and cover it in salt and pepper. Southern food revolves around a cornucopia of high quality veg and pork. You just boil it with a pork bone or cook it in bacon grease and serve with some local greens and herbs.

This. You eat nothing but the same veg every day for a few weeks at a time and cook it any way you can. Fried okra, pickled okra, gumbo, stir fried okra with rice, grilled okra. Sometimes there's meat to go with it. You wonder why we have so many meats, we're practically vegetarian most of the time. Someone always has a garden and a basket of howdy doo.
