It's a lot easier to make buttermilk and it has pretty much the same benefits. You could just mix the fresh milk with the buttermilk starter or some leftover buttermilk, then just let it sit at room temperature overnight. It doesn't have to be kept warm like yogurt and you don't have to deal with straining the kefir grains.

EASY MODE:
1. Buy https://www.amazon.com/gp/aw/d/B001EO69O2 , there are many starter brands but I found this to be most consistent and have best and longest lasting flavor balance.
2. Buy gallon(s) of milk. Read what I said about preferred kind, but the rawer the better. I make 2 gals at a time, mixing one gal full fat and one gal skim together.
3. Semi-optional but inconvenient without, obtain half gal glass milk bottles with reusable caps. Can just buy two with milk like the Straus ones and reuse immediately.
4. Pour milk in large pot.
5. Heat up to 28°C/82°F AS SLOW AS POSSIBLE, just use lowest flame/setting you can. Use thermometer and don't overheat it to not kill the flora already present in milk.
6. When at right temp sprinkle in the starter ONE SACHET PER GALLON. Instructions say one per quart but that's bs.
7. Let it rehydrate for a couple of minutes, then stir well (eg. with large slotted spoon) for a minute.
8. Pour inoculated milk into clean bottles; I don't bother sanitizing but wash with bottle brush and rinse with hot water very well.
9. Put caps LOOSELY on top.
10. Keep at room temperature for 24-48 hours. On hot summers (I'm in CA) it's ready within a day, when temps fall below 70°F you're looking at closer to two days, rarely more.
11. It's ready when thick enough that you can tip the bottle without it budging (see pic, some whey may separate). Close the caps firm and refrigerate. It will keep maturing slowly but can easily keep for 2 weeks.
12. Stir with chopstick or thin spoon to get first serving out, then shake bottle before pouring if you prefer it less chunky.

REGENERATING:
1. Save one cup (250ml) of kefir per gallon of milk.
2. Repeat steps above, except:
- Do not use starter sachet.
- Mix milk and kefir together before heating.
3. You can easily make 5 or more generations without new starter sachet, you'll notice the flavor profile changes as different bacteria (and sometimes, undesirably, yeast) becomes dominant.

HARDER MODE:
Use real kefir grains. They need to be looked after and it's a lot like feeding and using sourdough starter. More work when using them too. It's more satisfying and your might grow personal attachment to your little guys, but after mine failed when I had to take a longer break I just stuck to starter powder and regenerating.
Anyway the procedure is almost the same, except you need to yank them out before your kefir becomes fully solid, which takes practice to catch the right moment that's not too soon either. A special basket helps with that, or you can just pour it through a sieve. And you need to keep feeding them fresh milk between brewings, which wastes some milk (unless you brew smaller amounts, but then you pay more for milk anyway).
The powder starter two pack I linked lasts me between 4-6 months with a few generations made from each sachet so it's not a big expense. Though grains can last forever, and they keep growing so after a while you'll have more than you'll ever need.

amazon is unfortunately the easiest place to buy, there are other sites that sell direct but very few places have kefir cultures you can just pick up. Buy a live starter not powdered shit.

It takes about a week to start producing but once it gets going you have more than you know what to do with. I use it in a lot of things now, you can ferment at different temps and for different times to get different consistencies though you need to watch out for imbalancing your culture if you ferment too long, did that and had to course correct awhile ago. Thick and creamy kefir can be used like creme fraiche in cooking, I'm also going to make mac and cheese with it one of these days. It's incredibly tangy and good.

I don't even give a shit about whatever muh health benefits are, it's just extremely tasty. I don't buy storebought yogurt anymore because kefir scratches that itch so much better and is extremely easy to make (yogurt isnt hard either, but kefir is braindead easy). Most of the plain strained yogurt you buys these days is fucking nonfat garbage anyways, literally worthless.

Just be sure you only feed whole milk. Nonfat or reduced fat milk is fucking garbage sugar water anyways.

Yes. With powder starter cultures you always get same flavor in first batch if you keep the same process; subsequent batches do slowly deviate from it but mostly in predictable manner.
Grains are wild, constantly growing and much more difficult to keep in check. Even small variations in brewing process (ambient temperature, length) or storage and feeding between brews can throw them off balance and you'll be getting different flavor in every batch.
In the beginning, especially if you bought your grains online it will take a good few weeks for them to adjust after being shipped (in very poor conditions for them) to your location (temperatures, local yeast makeup that you'll inevitably be catching in your milk, etc).
Don't get me wrong, grains and ultimately the superior method for kefir, but much more difficult and work intensive to get good and consistent results.
Also I'm very wary of buying grains online, especially from randos on amazon (like >>18224389, holy link metadata btw), all the half-assed product descriptions and seller comments don't convince beyond reasonable doubt that I'm not getting Laqueefa's cultured vaginal discharge instead.
Best bet is to ask diary and egg sellers at a farmers market, or do like a boomer and check local moms groups or something on faceberg.

Large hole plastic strainer from dollar store is all that is needed other than a fermenting and fridge storage container. If you like cottage cheese, let ferment until completely separated in cheesy top and whey bottom. Kefir proper is strained off right before it separates into cottage cheese top and clear whey bottom. You will need to experiment with the exact amount of solids to carry over to the next jar to get kefir at about the 24 hr mark. Hell, if you are satisfied with kefir cottage cheese, that's easy! It is a challenge to get the right amount of solid shit and milk to get a thick kefir mix at about 24h.

You pour cold milk on top of them in the morning in a glass jar, cover with breathable cloth, when it's nice and creamy in the jar (can sort of see whey at the bottom for a good tell, whey looks like clear water spots in the thicker cream kefir), you strain out the grains and put that strained kefir in a new jar and put in fridge. Put grains back into the exact same jar, don't even have to wash that shit, and pour in new milk and repeat. It's so easy and usually takes like 24 hrs.

I honestly loved the taste from the start. I do mix it though just to change it up. It's good spiced like eggnog with cinnamon etc, the spices may cause some issues with the probiotics though, not sure.
Pure cacao is also good, normally you need sugar to cut the bitter taste, but kefir is so sour that it takes the edge off the bitter pretty well.

Vanilla is also good as is fruit puree that sweetens as well as adding some extra nutrients, as opposed to sugar which just ruins the benefits.
