My soups come out watery and bland. Just the other day I made a potato and sausage soup, even with a decent mirepoix and chicken stock it tasted flat.
What do I need to do to make good soup broth?

Sauté the ingredients before adding the stock if you're not doing it already, it makes a huge difference. Brown the chicken a bit then use the same pot fpr the soup.

Slowly stir in heavy cream until it’s a consistency you want and then let it simmer for a while. Does wonders to make a soup less watery and helps bring everything together. Should definitely work with a potato and sausage soup.

You probably need more salt than you expect. If you want to thicken it throw in a few spoons of picrel, it's just equal parts flour and butter mashed together.

Roast the vegetables beforehand
Add more salt, you aren't adding enough salt. Salt will turn your meal from watery vegetables to an actual flavorful broth. Why do you think people have been warring over salt for thousands of years - it's the best
