Share your chili recipes.

>500g ground beef, sunflower oil, clarified butter, chili flakes, salt, freshly ground black pepper
Fry until brown
>1 sweet onion, 15g fresh oregano, olive oil to taste
Drain oil from ground beef, add onion, oregano, olive oil and simmer
>150g tomato puree, 150g tomato paste, 2 diced cloves of garlic, 1.5tbsp cumin powder, 1.5tbsp cilantro powder, 1tbsp chili powder, 0.5tbsp paprika power, 0.5tbsp cayenne pepper, 0.5tbsp powdered black pepper, beef broth
Add ingredients and add enough beef broth to just create a moist simmering surface, save the rest for later
>simmer 10 minutes with lid on pan
Stir and add more broth if needed

Add and simmer for 3 minutes

Serve and enjoy. I like eating it with shredded cheddar and nacho cheese chips. I always have my chili after fasting for a day and a half so I make a fucking shitload.

Here's the cinema recipe of the day, a fast second course directly from the western "They Call Me Trinity" prepared by TV chef Benedetta Parodi. Sausage and beans eaten by Terence Hill.
Ingredients Sausage and Beans for 4 persons :

1 pound of sausage

Preparating Benedetta Parodi’s recipe for Sausage and Beans

And your added beef broth is going to include mostly salt, and aromatic flavors of celery, carrot, parsley and bay, if you didn't make it. So, yea, some soup flavors that aren't really Mexican. It's unnecessary. You browned your beef for flavor, so water or canned tomatoes are enough.

The best chili recipes feature the yumminess of different kinds of chilies. Buy a bag each of dried california chilies, dried ancho chilies, and dried guajillo, if possible.
If not possible to get dried chilies in your store or online, just buy ground ancho chile powder. Your dried chilies will be 1) toasted in a pan (optional), 2) soaked in cooking liquid or water, and then 3)pureed together in a blender

Brown your ground beef w/o butter, why butter? No, and you probably don't need to add ANY oil, as your ground beef is at least 10% fat already. It's less to drain later, if you don't add it up front. Patience, dude.

Blot out the rendered fat leaving just 1 Tbsp and your dry spices (chili powder, cumin, coriander powder, cayenne, mexican oregano (optional) salt, pepper) go into the oil, as well as any tomato paste if using.

I'm okay with some cornmeal if going to be a topping for like a chili dog, but for a bowl of chili, simple reduction is good enough for thickening. Someone will like having liquid available in the bowl to crush in some saltines or other toppings.

toast dried peppers and cumin seeds tthen soak for 20min drain water then put them in a blender with some beer and puree
in large pot sear all the beef annd set aside

Brown 2lb ground brisket, quick drain to preserve some juices if thats your thing.

The standard is some kind of fresh/dried herb, lots of cumin, lots of chili powder, a bay leaf or two and some paprika. You can add anything here and as long as you do enough cumin and chili p, you'll nail it.
Add choice of beans(buy them dry and make them, so much tastier)

Recipe I follow is similar.
Measuring by volume each ingredient gets halved.
10 cups fig
5 cups sugar
2.5 cups water
1 lemon sliced thin cinnamon/cloves/nutmeg
Simmer until a thin syrup consistency.
Spread a tablespoons worth on a plate that’s been sitting in the freezer for 10 min to cool quick and check consistency
