It's so cheap(3lbs for $20), tasty, and easily cooked but I've read that it's horrible for your health. How to eat this with rice on a daily without dying of cholesterol or something?

The issue is nitrites and salt content. Small portions only. I got two chuck roasts last week for similar price at Costco. You can buy a whole pork loin for similar too. A couple chickens. Just shop better.

also wedging the cabbage like that and steaming (not boiling!) is objectively the best way to cook and serve it. drizzle with melted butter and you're golden.

the reason corned beef is unhealthy isn't necessarily the fat (it's not really any worse than other kinds of beef in that regard), it's the chemicals used to cure meat. too much cured meat increases your risk of cancer
