Why would you ever cut up your entire steak like Americans do? It loses heat, loses juices and it doesnt do anything good for taste.

I always eat steak or porkchops right off a cutting board and use a chefs knife as a fork

Juices don't disappear into the ether when you cut up a steak. Even assuming that you didn't let it rest if you cut the steak up on a plate, then all the "juices" are on the plate. Which you then sop up with potatoes or bread, or whatever the chosen side-starch is. Hell you can even sop it up with non-starches like broccoli. if you try hard enough. Or even lick the plate clean.
