I've never really paid attention to the volume but touching off rough points from memory I use 2lbs of beef, 2 onions and a cup of beef broth along with 2 cans of crushed tomatoes and a can of kidney beans. That's the bulk of it, obviously also spices & such and sometimes I'll use more meat if I have some that I'm worried about going bad.

Well... It's name is "chili con carne". Which is meat and chili. By that virtue, Texan chili-purists say that beans don't belong in there. But they also use onion and cumin. So, it's not easy to say whether or not beans BELONG in a traditional chili or not. Other anons say, no beans it it's a topping for hotdogs or whatever, but beans if it's the main dish.
Honestly, I don't get how people do dried beans and chili in the same pot from scratch. They just don't cook the same way at all.
What I do, is I make a lot of chili ahead of time. No beans. Freeze down in small containers. Then I'll make a big pot of beans seperately. Generously salted cannelini beans, and then heat up leftover chili, and pour it over the top. It's the best way. Both chili purists and beans-in-chili fags can go get fucked.

fact is the reason why chilli with no beans became a discussion was due to a restaurant in texas (outside dallas i think) in the early 1900's that wanted to promote itself by saying that we are so texas, our chilli is all meat, no beans!

this took off as others picked up on it & started making chilli with no beans.

tl;dr chilli has ALWAYS been with beans until yokels in texas made changed their recipe for promotion.

I use bigger chunks or strips when there are no beans. When there are beans the smaller pieces and harsher sear really stand out and burst with flavor in contrast to the mushy bean paste when it enters your mouth.
