>simmer for like 4-5 hours
Wa-la cooked chicken and chicken stock. I usually take the stock and reduce it really low until thick. Add my chicken in that for a minute and serve on some mashed tatoes

>put on stove and bring up until hitting a nice simmer
>cover and turn off heat
>leave it and wait until it cools
by the time it's cool you now have perfectly poached chicken that isn't dry every time for whatever purpose

For 2 breasts, (with bone and skin for flavor, but not necessary)
In a pot with enough water to let it float a little
Add about 5 garlic cloves (cracked by crushing a smidge)
Whole white onion, cut in halves
1 tablespoon of fresh ground cumin
At least 2 tsp salt, up to 1tbsp
Gently boil for 2 hours

Bomb chicken for shredding and making bomb ass enchiladas suizas (green salsa enchiladas)
Or a killer chicken salad
Pro tip, fuck the mayo, use ripe
avocados for the fat.
For my chicken salad recently, i added minced red onion, serrano chili, tomato, celery chipped cilantro and a little salt to season. Optionally you can add some pepper.

I like to boil chicken quarters but I take the skin off first and fry the skin by itself in a skillet and snack on it. I like to use boiled chicken in pot pies or if I'm making chicken salad. What's even better, during turkey season I'll kill a couple turkeys and I filet the breasts and save those for baking/grilling or whatever and I keep the the thighs and legs which are usually too tough on a wild turkey and I'll boil them and use them for turkey salad, tastes really good.
