roast broccoli absolutely fucking smokes steamed/boiled broccoli

>baking sheet with foil
>in oven as oven preheats to as hot as it will go, usually 550 F/287 C
>cut broccoli into florets, cut stem into french fry sized pieces
>toss with olive oil and whatever spices you want
>take preheated baking sheet out of oven
>be careful retard its hot
>dump broccoli onto ripping hot baking sheet, will start searing immediately
>back into oven for 10 mins, rotate tray
>cook for another 5-10 mins depending on your oven
>enjoy delicious roast broccoli

broccoli is a brassica, tough plants that can withstand and actually benefit from a serious fucking blast of heat. i should've said don't cut the florets too small because faganon who clearly loves mushy steamed beta broccoli is right, if you cut tiny little florets they will burn, but beefy alpha florets will get that sweet maillard and be fucking awesome. holds super well too, i usually make a big batch on sunday or monday and have it for most of the week.

ya definitely do not oil the pan before it goes into the oven, have made that mistake and it will smoke out your kitchen quickly. there's a bit of smoke when the oiled broccoli hits the ripping hot foil on the pan but not a significant amount in my experience.

and yes fully agreed, roasted broccoli with some interesting high quality spices hit with some lemon juice or vinegar or other acid right out of the oven is one of the most delicious truly healthy foods
