Similar idea to how we get a disproportionate amount of medical breakthroughs from the study of extreme cases of abnormal health problems or injuries. No, the mailiard reaction does not produce cancer agents with meat. Browning something does not impart cancer causing compounds. Burning things does: specifically char. This is the stuff that if you consume it regularly, will give you cancer. It is the same with smoke inhalation, that shit gives you lung cancer eventually.

The good news is you can avoid char, just don't overcook your shit. Brown it properly, but don't blacken it, and if you must blacken something, do it sparingly.

Also:
Acrylamide is a substance that forms through a natural chemical reaction between sugars and asparagine, an amino acid, in plant-based foods – including potato and cereal-grain-based foods. Acrylamide forms during high-temperature cooking, such as frying, roasting, and baking.
