What is your favorite cuisine (whether a national cuisine or something more specific) and why?

I guess you'd call it Massachusetts cooking - a mix of the old pilgrim traditions and native indian recipes mixed with Irish, Greek, Italian, Portuguese, and a bit of Mexican. It's what I grew up with.
