-That time every single customer wanted the exact same thing on the menu and we were sold out at noon o'clock.
-That time I had to drive to work at 11 PM through a monsoon because they couldn't handle the flood (of customers). It was 4 people who wanted a pasta - sauce was warm au bain Marie and pasta was preboiled, needed just a 1 minute dip in boiling water.
-That time I didn't need to be paid because I didn't work.
-That last week of every month with no money for vegetables because the 50 yo owner's 30yo "gf" needs a new Delvaux.
-Being hired to improve the menu, having to work with the same menu/recipes of the owner, except now it's better because X is doing it. Having to explain to friends-customers what's going on.
-The opposite: new owners take over a popular place, want it to be fine dining. We create an in season menu with caviar, hop shoots, dentelles, the works. People kept showing up for tomatoes in January and afternoon waffles with pints, because that's what they did before. An absolute disaster.

The absolute worst nights are the ones where there are no customers and I can't do what I love doing.

He fetishizes kitchen workers in the most eye-rolling ways imaginable, calling them pirate crews and equating them to hardened military vets and shit. I gave them a two month notice and the executive chef start to choke up. leaving that place was the best decision of my life

I worked a middle-high end steakhouse for a few years and the cooking staff had to have been one of the worst, most degenerate group of subhumans you can possibly imagine. All of them were notorious drug addicts and alcoholics and basically lived paycheck to paycheck, immediately blowing the whole thing on coke and clubbing the moment they received it. Most of them were constantly in and out of trouble with drug dealers, debt collectors, pimps looking for money, etc etc.

I've worked rural construction, as a millwright at a grain silo, and as a salesperson who had conferences in Vegas every year. No group of co-workers partied nearly as hard, or were even close to the levels of outright insano in the braino degeneracy than the kitchen staff from that steakhouse.

I switched from being an RN to being a linecook about half a year ago. I love my new job and I can't think of a single bad day I've had there.
I've had some extremely busy days. Last night was very high-pressure for example.
At the end, though, it's just food. If people have to way 10 minutes longer than usual for service it won't kill them. Unlike in the ICU.
Plus we have a very skilled and pleasant head waitress who's amazing at keeping people entertained if there's a wait or buttering them up a little if need be. She doesn't have to do it a lot because we're a pretty efficient kitchen, but it's good to have her for it.

Every single employee of ours is a former drug abuser and we're all clean now apart from the occasional glass of wine etc.
I don't get the impression that anyone is even overdoing that.
