i thought the thread died, i finished it alright...i browned the mince in batches and removed from the pot with plenty of brown bits at the bottom, i then put in chopped bacon and let the fat render, then i intriduced onion with star anise and let it sweat a bit, then added garlic and let incororate, added dried cumin, corriander, chili powder, then deglazed with red wine, added beef stock, canned tomatoes, brought to simmer, added back the meat and let it simmer for 3.5h, added a knob of butter and some dark coca powder, then added drained beans and let them all cook for 20 more minutes. served over white rice. it was deicious.

Here is what I'd change.

Now add about three teaspoons of butter, reduce heat, thoroughly mix until smooth.
Add the star anise & coriander and allow to infuse until fragrant. This is referred to as "Tadka" in various cuisines and rounds out the flavour.
Strain the spices & set aside.
Now sweat the onions until transluscent.
Add tomato paste.
Fry tomato paste until fragrant & deglaze.
Add/re-add your other spices.
Proceed as normal from there.


What this does is impart a far deeper tomato flavour and extremely well-incorporated notes.
