Open plan homes and showpiece kitchens are an entirely modern trend. Some open kitchens aren't even used, just built for the flex while all the real cooking is done in a second, smaller kitchen hidden away in a closed room.

Before “modern” times, “open kitchens” were nothing more than a function of having a 1-2 room house due to poverty or rural living.

The apartment I just moved out of was rather open concept, since cooking is my hobby I use oils and such of course, and cook every night. Thing is, even tho I pointed out to my landlord that lack of a ventilation hood and maybe he should install one, he never did.
I lived there for six years, the entire kitchen ceiling and about ten feet outside the kitchen is sticky with grease.

I hope he had a hard time cleaning that shit up. Cheap bastard.

It's called "a curry kitchen" and it simply has a good fume hood. In a large family home, frying fish or cooking curries lingers. If you do that kind of cooking on the regular... frying in woks, strong spices in oils...this 2nd kitchen, a duplicate kitchen, is kind of the rich person's estate home solution to park your live-in maid/grandma to cook over there separately, keeping your show kitchen pretty, clean, and free of smells that'll be smelled upstairs in the bedrooms the rest of the time. Think of it as the old butler's pantry and staff kitchen of a not to distant past of the servant based era. A lockable cabinet with silver and fine china, a separate sink and cooking era to keep sauces warm.
If you're a young college student in some dorm, apartment building, you can smell all kinds of smells in the halls and simply hate it. If you work in a kitchen, you can smell frying oil in your hair, your pores, your clothes. It's annoying to some people, as much as clothing that reeks of cigarette smoke. You can face cultural judgement in the workplace if you reek of curry or onions right out of your pores just the same.
Of course if you had a proper high end fume hood installed, you wouldn't need this whatsoever.
