Skewered and smoked then finished over direct heat to reach 170 internal. Seasoned with tiny bit of soy sauce, liaojiu, oil, and a ton of Xinjiang seasoning throughout the cook (think lamb skewer recipe but with chicken, cumin and chili powder).

Fried wings from the chicken spot on the black side of town(Harold’s in Chicago for example). Lemon pepper if they have it. Best value when buying wings.

Grill them but throw a wood chunk or chips on the coals. Mexican (citrus and achiote), asian (soy, garlic, ginger), persian (saffron, onion, yogurt), etc are all decent options. It's one of those foods where even if it's not good, it's still pretty good.

OP here, I use a grill with indirect cooking and pic related helps a lot with getting that paper-like texture on the skin, as well as bringing out the flavor.
