I finally had a rauchbier the other day - maybe it was just a mild for-export beer, but it wasn't nearly as smoky or "hammy" as /ck/ had led me to believe.

Irish bro here. Local beer from a village close to mine.
Local pub owner started brewing and selling his own stuff during the big coof lock down. Used to pick up 6 bottles of his red ale on my way back from a forest walk.
Goes down nicely and has a nice bite from the blueberry in it.

I was expecting more smoke out of it. It's probably for the best that's it's more of a fairly balanced brown/auburn with a bit of.... beech? Cherry? It's a very clean smoke. There's actually a writeup on the liquor control board's page for this beer that calls it "A glass of bacon." and now I want whatever bacon this guy's eating.

It makes me want to try a few other rauchbiers and see what I can play with that would be closer to that than the usually overdone smoked porters and stouts we have over here. Right now, I'd probably be dicking around with a bit of smoked rye, and a decent amount of mid-high lovibond crystal malts

Bud Light Platinum is my every day drink.
Weekends, though? Thank goodness my local liquor store has a good selection of locally brewed and regional IPA's. Flying Dog has some good ones, Six Point Brewery out of Brooklyn, NY has a good one called Resin, which is REALLY hoppy and dank. Sweetwater has ONE I like. 420IPA, tried it on a whim, quite sweet, but had a crisp bitterness in the after taste.
Columbus Brewery has a few I like, Bodhi being my favorite out of those. And right now I have one more Proliferous Double IPA from Seventh Son Brewery in Columbus. It's got a juiciness to it it shouldn't possess, and is actually quite sweet, but I like it.

Scottish/Wee Heavies are lightly hopped - more malty or even sweet. Baltic Porters are dark, but usually fairly well balanced. Belgian Dubbels are usually darker in the 6-9% range. Tripels are usually paler in the 7-10% range. Quads are usually somewhere between in the 8-13-ish. All are more lightly tart than bitter. Vienna Lagers are sweeter than they are hoppy. Gruits as a stylistic constraint usually avoid hops entirely or sub most of them out for things like heather and spruce tips.

Standard Guinness is a stout by name only. It's very dark red - more Porter than Stout in that regard. It's basically Kilkenny with a bit of dark malt on the bill.

NO2 and CO2 are both gasses. Without them, Guinness would be bittersweet charcoal water. You can test this two ways: suck back a fresh draught of Guinness (or KIlkenny, or Caffery's, or...) like a fratboy and jot down your level of discomfort, and/or order a pint at the beginning of the evening and wait 2h at least to drink it, ideally just after a fresh one, jotting down your disappointment with (or approval of) the change in viscosity and flavour.

Guinness is only good in Ireland and the UK because it doesn't travel well; Murphy's stout does tho, and US etc bars typically don't have the nitrogen mix to make it pour nice and creamy. It also is only good on draught if it's been pouring like all day long; a pint of Guinness in the evening in and auld man pub in Ireland will be 100% better than the first pint poured that day, and even better than a pint poured in a pub that just lashes out lagers and vodka dash drinks.

Lads, I'm at a crossroads.
I can't drink beer any more. Lager or ale, it doesn't matter, all beer gives me a bad stomach ache and bad diahrrea the next day. It's not a grains thing either, I can still eat all types of bread, whole barley grains in soups as well, no stomach problems after that. But beer = shitting myself. I was fine with beer in my 20s, but now I just can't stomach it any more for some reason.

So basically I have to move on. This is the crossroads. What alcohol do I move on to? Vodka reminds me too much of late teens and early 20s, that was just for getting absolutely wasted drunk. Love that time, love the memories, but it's not me any more. I never liked any of the other spirts desu. Still hate whisky, makes me gag like nothing else on this earth.

So I've basically narrowed it down to cider or wine. What should I switch to, beerbros? Cider is nice, luv apples, simple as. In terms of format it's a good like-for-like swap. But it doesn't go with all food, and it might get a bit boring? There's only so much variation surely, much less than beer I imagine. Or I could go down the wine route. That seems to be the 'logical' progression, seems to be what pople move to as they get older and mature anyway. Tied to food very strongly, there's a reason it's called wining and dining. I've never really seen the appeal of it. It's ok, I don't dislike it like I disliked spirits. But...it's never blown my mind, I've never understood why people go gaga over it. I don't want to become some pretentious faggot winefag. Wat do?

Male wine drinker here. It’s funny buying a good Bordeaux. I usually get asked who I’m buying it for, Wife? Mother? Sister? Surely it can’t be for yourself. Then when I tell it’s for me, I get a shocked look. They recover and decide to ‘play along’ with me. Then they start telling me lots of things I know I about wine.
It’s at this point, if I can be bothered, I go through their shelves and tell them all the ones I’ve tasted and why I like them or not. Which regions I prefer, big up Marlborough, and why I’m not a fan of Californian and 100% prefer Spanish.
Now is when I think they feel bad. Because they always offer me loads of samples. I can usually free taste like 4/5 different ones min on every visit.
Having said that met a really nice man last time through the airport who was giving out Schlumberger samples. We had a great chat. He was awesome.
Now girls at bars when you order a large white find you immediately intriguing. They watch you take a sip. I think they are waiting to see if you make a face. When you look pleased then they have their in to strike up a conversation.
I don’t know a lot of other male wine drinkers but I wish I did. I can only go on so many tasting sessions with girls.

There are botanical hops. Late adds with most traditional British hops will give some pretty decent herbal and floral notes, maybe even a hit of angelica and gentian here and there. Overdoing CTZ is just... well, a hard hit of limonene, pinene and some myrcene with bitter alpha acids. It gets very grapefruit pith littering a pinegrove full of stoners real quick. I think it's just how overexposed I've been, but I prefer just about anything else to citra, cascade and CTZ for hoppy beers at this point.

Too bad citra is in virtually everything. There's some good new hops with all the tropical flavors but they make me nervous it's gonna be excessively dry hopped and have hop burn. Breweries all seem to be trying to make the fruitiest juicy beer now, I haven't seen one with Goldings hops or anything like that.

>> No.17633649

>>17633601
I tried to effect the change I want to see - I brought my brewer friend an EKG and Fuggle IPA. Still nice and hoppy, but not Yakima Valley.

Citra can be a pleasant hop - an amber or red ale at about 25 IBU with Citra added around 30-40 mins into the boil, and Galaxy added about 40-50 mins in is pretty gosh darned alright 99% of the time - It's just almost always too much of a good thing when brewed "professionaly".

>> No.17633652

>>17633601
A lot of the NZ and new European hops have been bred out of the classic noble hops. The last IPA I made was a single hop with Motueka, which is a descendant of Saaz. Might not be exactly what you had in mind, but the hop breeders have certainly been busy.

If you brew beer, see if your supplier has a hop list (or check hopslist). It's how I found out about Motueka (which is almost never in stock here), Adeena (great for not-quite-English lagers and ales) and Southern Passion (very... tropical - actually really good in sweet stouts).

It depends where I am. If I'm at a restaurant with a strong wine list, I'll probably have wine with dinner. If I'm at a sportsbar, and the options are "White" or "Red" I'm probably going to stick with beer, and depending on how shitty the place is, I might even avoid draught. If I'm hanging with my drag queen friends - especially if I'm playing wingman - chances are I'll have a few cocktails. Again, depends on the place: I can get a pretty good Sazerac, a great Hurricane, and the best god damned Negroni I've ever had, but not at the same gay bar. Almost makes me wish I could stomach appletinis.
Sorry, that got long-winded. If you're out at a place that's got decent wine, just get the wine. I just grabbed one of these on a whim. There are definitely better Belgians out there, but I don't regret buying this. It's got a bit of tang to it - can't decide if it's just a lot of candi added, or if it's ever so slightly soured wheat. It's fairly light for being an 11% beer - tastes and feels more 8-ish. Despite that sharp tang up top, it's very round in the mouth, and it smells fucking amazing. The head's nice and soft, but lingers. I am not disappointed in this beer. It's no Unibroue, but it's not bad for a small Toronto brewery working with dead and dying rockers.
