I dont even care anymore man. Unless I'm setting out to make an actual nice dinner then there's no point in doing a lot of work for tomatoes and noodles. I just need to eat something before I go to bed.

Also I bought a jar of that $8 Rao once. It didn't taste any better than the store brand I normally buy and it wasn't spicy (it was supposed to be arrabiatta.)

Don't get me wrong, canned san marzanos make the absolute best tomato sauce. They're so good you can just crush them up and it's good enough for pizza. The problem is cost; at more than triple the price they're quite the luxury option to dress spaghetti that costs maybe 10-15c a serving.

A can of crushed tomatoes and some fresh basil is significantly cheaper than a jar of pre-made tomato sauce. I always have garlic and olive oil, and it really doesn't take much more effort to make your own sauce than to heat up shit that comes in a jar. The difference in flavor isn't even comparable.

Virtually every jar sauce other than Rao's is uncooked tomatoes with water added. They're selling you water for the price of tomatoes. It's a scam, like nougat or "frozen dairy dessert." Rao's is over twice as expensive as making it yourself.

I like to make my own from whole canned tomatoes that I boil down uncovered in the oven with dried basil, dried oregano, diced garlic and onion (fresh if possible), salt, pepper, msg, fish sauce, a hint of maple syrup, butter, a little balsamic vinegar or other acid, possibly some tomato paste, and some alcohol - moonshine - red or white wine - vodka

bake at 300f stirring every hour then more often as it begins to reduce. You can add some water or chicken broth if it starts to reduce before the garlic and onion finish cooking.

Its done when it thiccens and any separated water is mostly gone. Then I blend it a little bit so it stays chunky.

Yeah I tend to only use whole canned tomatoes. Cherry tomatoes are bomb if you can swing the extra cost but I want some texture to my tomato sauce.

I mean you can still blend it smooth but they use "better" tomatoes for whole products.
