minimum heat is going to be too hot for gentle cooking unless youre always using huge heavy commercial tier cookware

not possible. the commercial ones actually use acetylene to get higher thermal output. natural gas is only capable of about 25k BTU under laboratory conditions. the 23k on a consumer burner is more realistic but depending on your altitude you might get more like 22k BTU.

yeah but not over the whole duty cycle. those oscillate. it's a bit like how an incandescent bulb works. it pulses off and on, so you might get 270k BTU at an instant, but averaged it's still probably 23k BTU.
