Fajitas are quintessential Tex-Mex. In this case, its stripped bell peppers, poblano peppers, onions, and marinated skirt steak. It can be made with chicken, or other kinds of meat, but the peppers and onions are mandatory. It’s wrapped with a tortilla (usually flour) with toppings like cheese, sour cream, guacamole, beans, salsa, etc.

I just like mine with a bit of cheese, and I like to sprinkle in some crushed tortilla chips. Maybe some refried beans if I feel like it.
