I accuse it of being low quality. Not just for the thickeners like someone else mentioned, but if you look at the ingredient list it has water added to it. And not just once, but water shows up separately in the ingredient list twice. High quality ice cream should not have water in the ingredient list at all.

WEll, even Quality is subjective. If thats the case nothing you ever buy in a carton at the store will compare to various ice cream shops. Though there is still one flavor publix used to have that was still, hands down, best I've ever had. called coffee toffee... vanilla cinnamon ice cream with a chocolate-coffee fudge (like, real fudge not the smuckers jarred shit.) It was basically like a fudge toffee with powdered coffee beans in it... or granulated, whatever, very fine mix.

It doesn't matter if there's water in the ingredients list. Ice cream is about 60% water by weight. Milk is about 90% water. There is almost no functional difference between 100 g milk and a mixture of 87 g water + 10 g skim milk powder + 3 g butterfat that was put through a homogenizer. There may be a small flavor difference if it's a dairy forward flavor like vanilla, but if it's something like chocolate, you're not going to taste the difference even if you try.

The quality of ice cream is typically like 80% determined by the quality of whatever is the flavoring. For vanilla, it's the vanilla extract. For chocolate, it's the cocoa powder. And you can't really tell this from the ingredients list, since high quality and shit quality cocoa will both be just listed as "cocoa powder" or such.

This is the information for chocolate ice cream from Haagen Dazs and Ben & Jerry's. The serving sizes are different, so we have to multiply the B&J information by 1.52 for it to be equal. B&J has 11g of fat per serving, and when multiplied by 1.52 is around 17g. That's 4g or almost 25% less fat for an equal amount. B&J also has about 15% more sugar but the protein is the same. So they've replaced the more expensive cream with water and thickeners which is pretty common to reduce production cost. They're not using water to reconstitute skim milk powder but to make it cheaper to produce.

Häagen-Dazs, per 100 g (multiplied by 100/130):
16.2 g fat
19.2 g sugar
4.6 g protein

Ben & Jerry's, per 100 g (multiplied by 100/85):
12.9 g fat
4.7 g protein
22.4 g sugar

I don't see anything wrong with these numbers. Generally the ideal fat content ranges from 12 to 18%. More is not necessarily better, as long as you stay within reasonable ranges. For some reason people associate high fat with high quality. I don't really agree. Consider that gelato is relatively low fat but few people would consider it a low quality style of ice cream.
