There are many different ways to prepare and enjoy ceviche. I really like the leche de tigre so I keep quite a bit of it in as a kind of cold broth. Served ice cold, it's very refreshing. Your pic looks like a prawn ceviche, something I have never seen, but I guess this is why the pieces are much smaller. Traditionally you would use sea bass (I used a local fish not unlike seabass in texture) and cut them into bite size pieces.

Anyway I followed it up with this paella but I stirred/shook the pan too much and it turned more into a risotto. What did you cook this week anon?

Compared to like a grilled fish and sushi, what is the texture like of ceviche? I like the idea of the citrus cooking the meat but I'm not a huge fan of cold sushi meat.

depends how long you let it marinate. you can do it just until the outside starts turning white and at that point its kind of like tataki (lightly seared sashimi). if you leave it for a long time it can cook the whole way through but for me the texture is a bit tough, there are better ways to cook fish fully

looks exactly like ceviche to me in central and south america is basically finely diced veggies and some seafood marinated in "lemon" juice served in a plastic cup also their lemon is completely different it's like a blend of orange and lime really tasty but can't buy it north of mexico

Its leche de tigre which for this particular recipe was lime juice, salt, chili, cilantro, garlic all blended up with some ice to make it extra cold. It was very nice.

Here is another image from the first page of google. I followed a recipe from a Peruvian chef since this was my first time. It really isn't that much, maybe only a couple of tablespoons, the bowls are very small and they taper a lot toward the bottom, making it look like a much larger volume.

I appreciate the input guys but if you don't really know what you are talking about perhaps you should not actually be giving advice. I also notice that nobody else has posted something they have cooked. In fact every time I try to start a thread like this not very many people post things and I'm starting to wonder if even 10% of the people here have ever cooked anything.

Every region or area all the way from the lower United States into South America has their own version of ceviche. Ceviche from Ecuador and Costa Rica, for example, will have broth or tomato sauce in their respective versions of ceviche, whereas if you get it closer to Mexico City it will be served dry with tortilla chips. A sauce being made through the cooking process and adding a sauce is different. When you say add a sauce, it is as if a sauce was purchased or made seperately and then added to the meats/vegetables. Either way you still end up with a curry but it is different method.

>I still can't make just a regular curry from scratch though
Why not? I made a curry last night, you can try this if you want

800g to 1kg chicken (breast or thigh, whatever suits your preference)
Greek style yogurt (a couple of cups, enough to cover the chicken when diced into 1 inch cubes)
2 to 4 cloves of garlic, minced
1 inch fresh ginger, minced
2 tbsp garam masala (common indian spice mix)
2 tsp cumin
1 tsp coriander
1 tsp turmeric
1 tsp smoked paprika
1/2 tsp cayenne (or to taste)
1/2 tsp black pepper
1 tsp salt

Mix all this up in a bowl and let it sit in the fridge, covered, for a couple of hours. While it's in the fridge make up another mix of the same spices as above.

Dice an onion and sweat it in a pan, when the onions have softened add the same amount of garlic and ginger you used above and cook about 30 seconds until fragrant, then put it all in a dutch oven/slow cooker/whatever. Now you can take your chicken and yogurt sauce and put it straight in the dutch oven/slow cooker whatever you're using OR you can brown the chicken in the pan first. It's up to you. So put the chicken in the pot/cooker, add the rest of your spice mix and a jar of passata (700ml). Add a few black cardamom pods too. Mix it together and let it cook until the chicken is tender. Add about 150ml of heavy cream to help thicken and brighten up the colour. Garnish with fresh cilantro.

17th century pancakes inspired by
"The Accomplisht Cooke,
or:
The whole Art and Mystery of COOKERY,
fitted for all Degrees and Qualities’ by Robert May, 1660.

„The most exquisite way of making pancakes“

With sherry, rosewater, cinnamon, ginger, clove, nutmeg, jersey cow double cream, Maran island brown eggs, a bit of sourdough starter and fried in ghee. Served w honey and some dried flowers for decoration. Bit chewy but nice taste, and due to the flavours in the batter didn't need more than honey (would try w an 18th century pudding sauce or just lemon and sugar tho).

You don't put a whole potato on soup, you don't because....JUST BECAUSE OKAY?!

Keeping them whole makes them more slippery and more annoying to eat, they also seep less startch into the medium to thicken it up.
I would at least cut them in half for a soup or something. And if you are less lazy then dangiri cut to have even volume chunks.

I don't want to waste a half hour taking photos and writing out what I'm doing in them for a thread just to see it drop off page ten because the board is constantly filling up with fast food and mukbang threads. It's just a waste of time and effort.
The proverbial straw for me personally was when I made a thread butchering and cooking a hare and it was spammed with one-word replies to get it to 300 just so it would die faster.
Why would I bother after that?

Brother, I feel ya. This shit is a problem on all boards.
Porn posting on blue boards, stupid tiktok images, irrelevant time wasting questions with racemixing images, it goes on and on.
There is an issue with people having some kind of mental damage so they can't genuienly interact with other people. And on top of that some kind of raiding faggots that spam shit.
I personally make things for me, sometimes I like to document things too, sometimes I'l share things as well.
