Is it the USDA's sole objective to ensure the American public has nothing but dry overcooked meat? I cooked some spare ribs to the USDA recommended temp of 145 and the were tough as shit.

My position is one of the few I know of that has strict standards, I had to take an 8 hour written exam and I'm in the process of getting the second part done which is a "field exam" basically making sure I didn't fuck up my job. Most people I work with that aren't in my field can barely read or write.

Those are just the temperatures at which those foods are pasteurized INSTANTLY
Their objective is to ensure that the unwashed masses don't get food poisoning. It's for stupid people, who, by all rights should be eating bugs and soy protein, instead of meat. Smart people will have a better understanding of pasteurization, and cooking, and will sous vide their meat.

Cheap methods, maybe. Unsafe methods? If someone gets sick and it's found that the ham that came from that manufacturer was the cause, that manufacturer will still have the feds crawling up their ass, even if the ham was not reheated to that temperature.
The temperature chart is more for those people in the food service industry rather than anything else. Just TRY to order a burger at a fast food joint to a certain doneness. But you can at least still get it at the local pub.
