A mix of too high a temerature and using oil. If you need to use oil for health reasons try a spray or smaller amont of oil. You will also have the same issue with lard if you use too much in the pan. However high heat is the main culprit when the watery egg hits the oil there is an instant reaction cooking it a bit lower temperature and taking a bit more time will keep the whites from bubbling up. At leats that's my experience i could just be lucky at cooking my eggs.

Get a non stick and spray a tiny bit of canola oil/pam. Then continue cooking on very low and you will have smooth perfect eggs without bumps.
