However, among artisanal/craft winemakers, there is a renewed interest in old-style "natural" stomping... where unmaintained feet lend a funky, fruity, cheesy, sour, or otherwise "barnyard" notes. But this prevents a different challenge. Wine connoisseurs are always looking for new and unique flavour, and stompers with athlete's foot are a dime-a-dozen.
