190F sounds like it's pushing it but I've been pleasantly surprised by "overcooked" chicken breast in the past so I agree. People talk like it's inedible as soon as it crosses 170, but even overcooked breast is pretty good if the meat was okay in the first place. I wonder if people are getting woody breast and thinking they overcooked it.

Now, lean pork on the other hand becomes absolute dogshit if cooked significantly beyond 145, just incredibly tough and dry.
