I'm on a bit of a fish kick lately, as is my wont, and I'm curious about different types of fish and what you guys like to cook.

I've lived in a couple different countries on opposite sides of the planet and it's interesting to see entirely different species and a whole different market of fish and shellfish.

I crisp'd up some ling for the first time today after work and am pleasantly surprised, it's like a cross between cod and haddock and wew buddy I could eat this every week.

Get the Josh Niland books, they are really goddamn interesting.
The Whole Fish for southern pacific fish and Take One Fish for norhtern atlantic fish.

My favorite things he does is making glaces from roasted fish bones. As far as I know all traditional cuisines make a white fish stock and the brown ones he uses are fucking amazing.

Also swordfish schnitzel, swordfish belly bacon etc are all really fun.
Will also teach you to butterfly fish hand various other things.

My dinner tonight, do prawns count as fish?
Favourite way of cooking fish is in the over until it’s got a crispy top.
I used to eat a lot of salmon but I have lately been eating a lot of basa.

I like shark and salmon usually. Salmon from the salt, not the fresh. Trout when camping and fishing. Largemouth bass is delicious and mild. My favorite fish to catch and eat is bluegill from clean lakes that also have trout. Gut'em, scale, chop the head, bread and deep fry whole. Delicious. Don't do this with bluegill from some muddy horse/cow pond on your friend's ranch. Not good.

hell yeah they count, this is all things fishy! I saw basa today but opted for the Australian ling, I have to try basa next. they had salmon super cheap but I've got piles of salmon in the freezer and wanted to try something new. Looks delicious anon, one of my signature dishes back in the USA is what we call shrimp scampi. I don't think I have a pic but it's a classic. Pic is a seafood newburg I made recently (Boston style with Australian shellfish).

Nice, I rarely eat freshwater fish except one time in Montana I had trout which was smothered in mustard. I was pretty meh on it but looking around the diner I could see a lot of people slurping it up like it was gold. I went deep sea fishing once off Cape Cod and caught a couple sandsharks and decided to keep them. They were very neutral, maybe more mild than haddock but some butter and pepper over the campfire it was delicious. Huge meals for zero dollars.

I like to make fish cakes with canned Mackerel, or smoked fish pie with smoked Kahawai (a type of Mackerel) or kippered Hoki. I just Googled Kahawai and apparently it's an Aus/NZ Salmon. The meat is no where near to salmon, I suppose the fish itself is.

does chowda count? what's a good fish for fish chowda? most whitefish is too flaky and falls apart
