Hi thread.
Does anyone else ITT brew the Cafe du Monde with chicory? Has it been tasting funny to you lately? I usually brew Community with chicory, but it's grown difficult to find locally and Amazon price gouges it to fuck and back so I've been using other supermarket brands lately.
Of the last three tins of coffee I've gotten, the first and third were CdM and the second was Melita European roast.
The Melita tasted as good as it always has but both cans of CdM tasted far more astringent or acidic or a word like that than I remember it tasting. The brew was also considerably thinner, if that's the right word here, than I'm used to. Has CmD gone to shit or am I fucking it up somehow?

Your "medium" roast is a just blend of light and dark. This does not replicate a medium roast, because light and dark roasts require different extraction temps, so you're either going to over-extract the dark beans or under-extract the light ones. Also, if you separately brew a light roast and a dark roast and combine them, the result doesn't really taste like a medium roast, it's a lot more muddied.

i recently bought a 9 cup stove top perculator from a charity store (turned out to be 1970s corning ware, had no idea when i bought it) for 5 dollars. coffee tastes acceptable, i bought it because i like drinking cold coffee in summer on the way to work. my question is how is this older style of perculator different to pour over?water condenses up through a tube and drips down through the coffee several time to desired strength. as long you get a good rythm with the boil and don't over do it i find it works quite well. but this method seems very unpopular these days?

Actual I'm floored so I'll spoil it. This cup has no business being this good. I did Tetsu's lazy one pour 25g to 300g, pretty fine grind, pouring all the water in 15s, 1m30 draw down. It's very sweet with no hints of acidity or bitterness. It doesn't have a ton of body but it's really quite good, I legitimately expected garbage coffee. Would try again and tweak, maybe use slightly cooler water (used 96)

If you want the original jap hario, those are allegedly cafec whites. Origami cafecs MAY be whites (as they're clearly different to lights and mediums) but I'm too lazy to send off an email and find out. I like the origamis about the same as the mediums. I've done sub2min center pours when I was fucking around with how far I could ruin "osmotic flow" and still get something drinkable. Turns out its hard to fuck up good coffee. You're not going to get as "optimal" of a cup or whatever doing so, but you'll produce coffee. For the center pour, try to match your pouring speed to whats coming out of the dripper. Maintain a steady water level until you've hit your water weight.

You're going to get flamed for the grinder because it's the most important piece of your setup other than the coffee and you went with pretty much a bottom of the barrel option but spent a bunch on a kettle that's not going to give you any advantage for your chosen brew method.

Only advantage of an electric grinder over not having to do the work yourself is capacity. A hand grinder's maximum capacity will be significantly lower than most electric models, though that's probably not really a concern unless you're grinding back to back all the time in a commercial setting where you'd never have a manual grinder anyway. Ultimately any grinder is just a set of burrs bring driven either by you turning a crank or by a motor. Get better beans. Contrary to what hipster coffee shops will try to get you to believe, coffee brewing isn't some esoteric magic shrouded in mystery. You're just flushing solubles compounds out of the bean with water. Bean quality, roast quality and freshness account for the vast majority of the flavor. Brewing accounts for maybe 15%-20% at best. Immersion brewers are easier and more forgiving than pour over. So if you don't want to be assed to do a bunch of fiddly measuring or kettle work then just get something like pic related. Watch James Hoffman's guide and you will be 95% of the way there regarding brewing.

Also don't neglect storage conditions. You lose the ability to get the "taste like it smells" brew in a couple days after you open the beans if you just leave them out on the counter. Every time you open the container and smell that delicious coffee aroma, that's flavor compounds off gassing into the air and not going into your cup. I buy in bulk and store my beans in an airtight container in the freezer and only take out a couple of days worth of beans at a time and store that in an airtight container in the fridge to have as little loss of aromatics as possible. This method can keeps the beans at taste-like-it-smells freshness for months.

retard. Start with a 1/16 coffee/water weight ratio. Keep a fixed recipe (brew time/temp) and grind medium coarse, if it's bitter grind coarser if it's sour grind finer. You can adjust ratio to taste after.

Same thing. Little flexible needles. Mine are .35mm I guess. Seller said to sand the tips so I don't scratch my baskets. Couple minutes of light light brushing across a shapton 16k and its done. I could have used a way coarser stone but I didn't want to remove too much material.
