Extra storage for pan types they don't use, or old pans they choose not to part with. Here when they downsized to the 11inch they have now they didn't throw out the hundreds of pans or thin trays, they kept them. Same as when the Big New Yorker promotion ended, they didn't get rid of the large pans, they just stored them up in the ceiling until they were needed again. Plenty of Pizza Hut relics up there.

The originals make sense when you've created a restaurant and need to accommodate potentially hundreds of people.
Pizza is no longer a restaurant food, so the stores have changed to match this.

The reason fast food is square buildings now has nothing to do with covid.
firstly, having a commercial building shaped vaguely like a home is subtly damaging to your mental health. when your work looks like home, your home looks like work.
secondly, these wacky building shapes are difficult to sell if the restaurant closes. franchisees will be hesitant to buy in.
thirdly, a rectangular building is just plain cheaper to make, and the rising popularity of external insulation panels makes them modular and simple to renovate.

This. There’s an old Taco Bell from the 70’s/80’s in my town, and after the Taxo Bell closed, they could never get customers to lease it because of the odd shape.
