How do sardines taste compared to other fish?

I'm considering picking some up from costco next time I go.

In the end it's fish, but they have their own taste, like a slightly bitter note layered over it.
They're also extremely popular anywhere where they're easily available. Really great fish.

Roast gently with salt and a bit of lemon. Best over an open flame by the sea with friends and beer, but a grill will do too, or even a pan (use a drop of high quality olive oil if using a pan. Really just a drop).
If the skin is lightly crunchy at spots, it's ready.
Great served on their own, maybe with some bread. Also wonderful on a bruschetta (on top of gently toasted baguette. Rub some garlic on it, then put on minced tomato, fresh parsley, and crumbled sardines).
Canned is OK too, you just have to heat them up and they're good to go. Not as good as fresh, but still great.

It has a smell stronger than its taste. Fishy, proteiny, and a little fatty. Imagine canned mackerel but a little less fatty and much more fishy but not in an ammonia-way. If you are getting canned sardines for the first time, get ones in oil or water rather than ones in mustard or tomato sauce (those flavors tend to really iffy depending on the brand).

They only put part of the fish in the cans, and usually use the small ones instead of the nice bigger ones. Bigger ones can get up to a foot long I think. You can buy or order whole sardines, although quality will vary depending on your area. I get dried, smoked whole ones from the asian grocery occasionally. At least I think they are sardines.

Anchovies are fucking life as a snack.
Put them on top of some strong cheese. Aged curated sheep cheese is the best I've found, tastes similar to Parmesano but gentler. And then bite into a piece of hard breadsticks.
