I worked at a cafeteria in college and so many people ate bananas that were mostly green/slightly yellow.
They always said the bananas went bad if there were a few brown spots on them.
This was the majority of people too. I was really taken aback by this.

Bananas are such shit fruit. I can't believe we import them at the rate we do. If I buy a bunch of bananas 2 of them will be fully brown by the time I get around to eating them. I can buy a 5 pound bag of apples and the last one is still good 2 months later.

I always buy bundles at the underripe stage. Tastes the best when its green, firm, and has a mild sweetness. Then by the time im down to the last banana, its at the "ripe" stage, which is tolerable. After that theyre way too mushy and saccharine.

Depends on what you're using them for. If you're eating them straight up then you want them to be ripe like in the middle. If you're using them in baking though for like banana bread, then you want them to be very ripe or even overripe.

Never use them green for anything.

It's not rotting. It just means all the starch has turned to sugar. A lot of animals will specifically seek out overripe fruit because it provides more energy and is easier to digest. Calling it overripe in that case doesn't seem accurate, I think people have just gotten used to seeing perfectly yellow bananas in media and see the spots as blemishes which means the fruit is bad, but I actually prefer bananas with spots because they have more flavor. Underripe bananas seem almost astringent which I don't care for.

I've read that bananas give off gas that can affect how things ripen. If you're keeping them in a sealed bag or maybe the grocer isn't storing them properly that could be why. But I've never personally experienced that and I eat a lot of bananas.

I like the starchy barely sweet banana taste, and prefer the firm texture. When its soft and actually sweet then its best to leave and let get even more banana-y for some delicious bread. Middle tier bananas are great for smoothies because they wont give it any odd sliminess but are sweet and soft enough to blitz nicely.
