Use a finer grind than pour over.
Use some more coffee because it's immersion brewing.
Add coffee, then add water, wait 2-3 min, stir once for coffee to sink to the bottom, wait 1-2 min, pour with the press well just below the surface. Pour controlled. Intuitively we want to smash the press to the bottom but all you have to do it leave the press about 1/3 of the way in and let the screen do the job. If you don't disturb the sludge at the bottom it won't travel to your cup, but FP will never be as clear a brew as other methods. It's oily and full bodied delicious poor faggotry.

Brew water as in the water that's already gone through it or the water that's been heated to go through it to bring it up to the same temp as the water that's going through it?

I'm talking about when the water goes through the nozzles and breaks into smaller droplets on the fall from the melodrip to the grounds. 3 huge factors to heat transfer are
>delta T
temperature differential, in this case between the air and the water, the higher the delta T, the faster heat will transfer and the heat transfer slows as it reaches equilibrium state
>contact time
The longer the two differently tempered fluids are in contact the more heat that'll have the opportunity to transfer (to the limit of the equilibrium state). So the higher you drop it from, the more cooling there will be.
>surface area
by breaking the water stream into a bunch of tiny droplets, you're massively increasing the surface area which greatly increases the amount of heat that's transferred.

The only thing that works in the favor of this setup is that air is a fairly shitty conductor of heat energy, but if you're the kind of person that's throwing a lot of money at getting the perfect, consistent cup of coffee, I guarantee the water that's hitting the grounds is cooler than you expect it to be.

Grind size doesn't really matter, your flow is going to also be affected by freshness of the bean,size of the batch and the filter you're using. You're not going to be able to tell how a coffee will taste from looking at the bed, so just time your drawdown for consistency and adjust from there.
