yeah I made the rice with the olives mashed up in it and I cut the rice water with olive brine. and then I put a packet of sazon goya in there. too much msg but I ate it.

Risotto fag again. Afghani midget I work with said shred white onion, mix with some water and marinate lamb in that. I did, added some a zhatar spice blend to it, and let it go. The next day out of the marinade, the lamb was grey and almost falling apart, and it looked semi cooked. I guess the enzymes in the onions broke that shit down and impregnated the most wonderful flavor to the meat. I cooked it in a pan because, at the time, I was a no grill fag and had to make due. I sprinkled on some sumac and dug in. Served with some authentic Naan midgets wife made and a little med salad on the side. Aside from the missing charcoal flavor, it was top-notch and will never dine out for Afghani lamb again.

Bacon, panchetta or whatever bacon like meat you got, in the pan till crispy. Set adise, leave grease. Abborio rice, toast in bacon grease, move them over, add onion and garlic. Mix. Ladel in preheated water (I used low sodium chicken stock, was still too salty) keep slowly adding as the rice absorbes till you reach however you like your rice. Separate bowl, I mixed 5? egg yolks (use fresh eggs if you can; they are the star of this dish) and grated Parmigiano. Remove rice from heat, chuck in some butter, add your egg mix, and toss that shit real good. Top with your set aside bacon and some parsley and pepper.
