There are actually a lot of native ingredients here that are really good for all sorts of things. Lemon myrtle, native saltbush, finger limes, myrnong root, quandongs, kangaroo and wallaby, etc. But (speaking as an Australian) most Australians are too stupid, lazy and arrogant to want to try them. This is a country for whom Greek and Italian food were - and still are in some places - considered wildly exotic to the point of ridicule. We like to think we're plucky and easygoing but we're actually just incredibly lazy and narrow-minded.
