There was this taco truck a decade or so ago in Puyallup WA that was fantastic. It was a refitted bus I think. They built a kitchen in the very back and there were counters inside with bar stools for seating. The driver's seat had an old tv set up in it with soap operas. My family would go there often since it wad cheap as fuck, and my parents spoke enough spanish and knew what good beaner food is instead of orderung like gringos, so the owner and hus family really liked us. We'd often be given free stuff while we were eating. The owner noticed how much I loved the spicy pickled vegetables with my food and would always bring out a big cup of them for me.
They were pretty damn based, I hope they're still around and doing well.

Same with actual Indians cooking real Indian foods. Both cultures have a modern history of manual labor and lots of walking. Workers look for calorie rich, cheap foods which usually means cheap or little meat and lots of oil. This is only an issue when the foods are still eaten by local or foreign sedentary people who do not do physical work.
