I’ve lived in Thailand a long time. I’ve never once had 2 identical dishes of pad Thai. They vary dramatically, more so than any other Thai dish I can think of right now, and on top of that are seasoned to taste in very different ways with a number of condiments. I’m no fan of Ramsey but this guy was almost certainly just being a wannabe noodle-Jiro.
