Well, I don't eat beef or veal kidneys like the ones in OP, but with proper preparation, pork kidneys won't have any urine-like odour or taste to them.

I wan to try animal organs aside from just meat, but I'm not sure where to find them in the US. I really want to try liver, I've heard that has an interesting taste.

do not soak your liver in milk. removes all the flavor and probably whatever nutrients it has too. if you get your meat from a good source (i.e. a farm directly), it will taste absolutely delicious no matter how you cook it, even if you turn it into shoe leather by cooking it too long. i get grassfed cow liver from a farm not too far away and even when I cook it too long and it gets a bit dry and unplesant to chew, the flavor overcomes the texture and makes it exquisite. if you cook it well, that is until it's brown and soft, it becomes some of the most delicious meat you can taste, right next to tongue, heart, and brain.
